This recipe fits 8x8 pan or pie pan. To make an 8x11 pan, double the recipe.
Leftover pasta - or 6 oz cooked pasta
1/4 cup grated Parmesan Cheese
1 T. Butter
1 egg - beaten
Spaghetti sauce
Meatballs (optional)
Grated mozzarella cheese (2 cup?)
I don't measure - so these are approx. the amounts. I don't think you can mess this up as long as it is fully cooked!
Mix your hot (or reheated) pasta with the butter and Parmesan cheese. Mix in the egg, and stir well. Place this mixture in your greased pan for the crust. Press down.
Cover with spaghetti sauce and meatballs if you have them. Sprinkle with more Parmesan cheese.
Cover and bake @ 350 for 20 + minutes. When it is hot and getting bubbly take foil off and sprinkle the Mozzarella on top. Bake until melted and brown - sometimes I broil at the end for a few minutes.
If you have cold meatballs and sauce - it might take 45 minutes for it to cook.
If you like ricotta - you can add some on top of the crust layer. I have also added pepperoni on top and that's good. I'm sure cooked sausage would be yummy too!
