Pimiento Cheese

8 oz. sharp cheddar
8 oz. extra sharp cheddar
1.5 (or less, to taste) of mayonnaise
1 T. grated onion
1 T. Worcestershire
1/4 tsp. red pepper (optional)

Grate cheese and combine with remaining ingredients. Allow flavors to meld in the fridge several hours before serving.
